Happy Friday! Here is a recipe for your weekend – a balsamic roasted strawberry smoothie. Balsamic and strawberries compliment each other so well. And the strawberries roasted with a little sugar give this smoothie the perfect amount of sweetness. I hope you enjoy it. Have a great weekend :)

Balsamic roasted strawberry smoothie
500g fresh strawberries, hulled, quartered
2 tsp raw cane sugar
2 tsp balsamic vinegar
Pinch of salt
2 cups (500ml) whole milk
1/2 cup (125ml) plain yoghurt
A handful of ice cubes
Balsamic vinegar, extra
Preheat oven to 150˚C (300˚F).
Line a baking tray with baking paper.
In a bowl, add the strawberries, sugar, balsamic and salt. Toss to combine.
Transfer to baking tray and spread in an even layer across tray.
Roast for 20 minutes. Turn off oven and allow to completely cool in oven.
Place milk, yoghurt, roasted strawberries and any liquid into a blender.
Add ice cubes and blend until smooth.
To serve, divide among glasses.
Serve with extra balsamic and add to taste.
